Sidetracked Sarah‘s Crock-Pot Stuffed Pepper Soup offers up plenty of heat on cold winter days. This beginner-friendly recipe only requires chopping vegetables and browning the meat. The slow cooker will do the rest.

This recipe calls for two chopped green peppers, but you can add more or use red peppers if that is your preference, and cooks on high in 4-5 hours and on low in 7-8 hours.

Sidetracked Sarah recommends using brown rice with this recipe, but if you do want to use instant or white rice you’ll need to add it toward the end of the cooking time so it doesn’t become mush.

This recipe takes about 20 minutes to prep and yields six servings.
