This recipe from the nice folks at Delish calls for some spices familiar to those who enjoy the cuisine of India: Grated ginger, curry power, cinnamon.

It takes about 15 minutes to prepare and five hours to cook in your truck’s crock pot.

The only special tool you need is an immersion (stick) blender. Otherwise, this soup is as easy to make as it is enjoyable to eat.

One of the nice thing about making your own soup is that you can control your salt intake. Most canned soups or those served at restaurants and truck stop fast food places contain plenty of sodium.
