It's possible to enjoy fresh baked banana bread while on the road

Living the driver's life on the road and eating most meals prepared in your truck does not mean you can't also enjoy one of the true comforts of home: fresh baked goods.

Here's a recipe that's relatively simple, and employs the RoadPro 12-Volt Stove, a staple of any professional driver's on-truck kitchen.

Nana's Banana Bread

  • Prep Time: 10 minutes
  • Cook Time: 2 1⁄2 hours
  • Servings: 6-8
  • Yield: 1 Loaf

Ingredients:

  • 2 medium bananas peeled
  • 1/3 cup butter, unsalted or salted, melted
  • 1 pinch salt
  • 3⁄4 cup sugar
  • 1 large egg, beaten
  • 1 tsp vanilla extract
  • 1 1⁄2 cups all-purpose flour

Directions:

Plug in your stove to preheat.

In a mixing bowl, mash the ripe bananas with a fork until completely smooth. Stir the melted butter into the mashed bananas.

Mix in the remaining ingredients. Add the baking soda and salt. Stir in the sugar, beaten egg, vanilla extract, and flour.

Spray the foil pan with cooking oil.

Pour the batter into your prepared loaf pan.

Bake in the RoadPro 12-Volt Stove for 2 1⁄2 hours or until a toothpick inserted into the center comes out clean.

Remove from the RoadPro 12-Volt Stove and let cool completely before serving.
