Few things remind us of summer’s garden goodness like stuffed sweet peppers. That’s especially true now that we’re driving through winter.
This recipe from Delish creates a meal that’s loaded with flavor while being quick and easy to create. Large sweet peppers are easily found at most grocery stores and get stuffed with:
- Hamburger
- Black beans
- Rice
- Corn
- Tomatoes
- Monterey Jack cheese
These are easily assembled and take about three and a half hours to cook in your truck’s slow cooker. The recipe calls for oregano, garlic, cilantro and cumin, but you can feel free to dress them up any way you wish.
