If your routes don’t take you near New Orleans you can still have some hearty NOLA-inspired gumbo right in your truck. This recipe from Tammilee Tips uses sausage, chicken and shrimp with spicy flavors to create a dish that is filling and flavorful.
You’ll mix all of the ingredients together, minus the shrimp and rice, and put them in your slow cooker for about 6-7 hours. This meal won’t be ready by the time you stop for the evening, but it’ll be pretty close. You’ll need to be able to add the shrimp and rice in during the last hour of cooking.
