Make Chinese takeout in your truck’s slow cooker

Updated Jan 6, 2018

Beef And BrocNow you can kiss goodbye that craving for your favorite Chinese food that goes unmet because there are few — if any — places to find beef and broccoli at most truck stops.

All you need is a slow cooker and this recipe from Ready Set Eat and you can settle in for a healthy, hearty meal; the kind you usually get for takeout.

This recipe uses flank steak, a staple in stir fries of all sorts and in fajitas as a substitute for skirt steak. It’s easily found at most markets and oughtn’t be too expensive.

The rest of the ingredients include chopped fresh ginger and garlic as well as soy sauce and brown sugar. Frozen broccoli is as good as fresh in this dish.

Cooks on low for 7 1/2 hours or on high for just 3 1/2 hours or until beef is tender.

Note: this recipe makes six servings, so you can count on leftovers … unless it has been a stressful day and you need a bit extra comfort food when day is done.
